Praha-Třebonice:
Staňkův Rukodělný Pivovárek Třebonice

The rather long title of this quite small brew pub means Staňkův hand made brewery at Třebonice. It was not the first time I had come to this village to visit the pub but it was the first time I was successful. I came previously in May 2012 with fellow beer taster Russell. We took the bus to the village centre and walked back to the address and found a farm protected by a large gate. We rang the bell but then gave up after getting no answer.
On this visit, after checking the brewery’s website for the opening time, I went through a similar procedure and almost the same thing happened. However this time I noticed a bell on the electronic gate labelled “Restaurace”. So I pressed it and spoke to a man who told me to go further back along the road to a camping and caravan site and I would find it. And sure enough, after walking back, entering the park and following a sign, I arrived outside the pub. It was the rear of the U-shaped farm yard we had first tried to enter.
I must say that I was very impressed by its look. The entrance was up three stone steps under an arch of foliage. Across a tiny terrace and I was in an equally small pub; I would say there were seats for no more the about 20 customers. Two walls and the front of the bar / service point were covered with beer mats from all over the world.
The brewery is the brainchild of David Staněk. If I’ve got this right the caravan site is operated by his brother Jiřího (George) and the small bar and Restaurant Gusto are part of this complex. The logo of the brewery mentions the year 2005, so I guess this is the year that David started brewing. Here it has been established since 2010 and that year is generally accepted as the first year of public production for the little brewery.
Little it certainly is, being capable of turning out just 150 litres per brew. In the early days the entire production was of top-fermenting ales as David couldn’t afford to purchase the secondary maturation tanks necessary for the lager beers. This situation has now changed and the output is a mixture of both types. The list of beers brewed in the past is enormous and covers all styles.
This is what was on offer when I visited: 13% Diva Bára Tmavý Speciál, a dark medium strong beer; 15% Cochon Blond, a strong beer in the Belgian Abbaye style; 11% Kellermeister, in the mode of a German Kellerbier and finally: 13% Lafayette, modelled on Belgian Saison. Amazingly, you could visit a week later and the whole lot would be different!
The caravan park is obviously only open in the summer months and this very much dictates the opening hours of the pub. As long as the park is operating the pub opens every evening from 17.30. However winter is very different and the normal routine is for the pub to open on Friday and Saturday only from 19.00 to 23.00 when access is through the farm yard.
Yet, it is important to check on http://www.pivovartrebonice.com. Hot food is available throughout the summer and cold food may be possible in the winter.
This pub is in the most rural part of Prague that I have ever visited and is it well taking the journey out of the city on a summer evening to enjoy some interesting beers.
